Gelatin vs Collagen: Same Protein, Different Form, and Why I Eat Gelatin Every Day

Gelatin and collagen are the same protein. Gelatin is collagen that has been cooked, and collagen peptides are gelatin cut into smaller pieces.
So the amino acids are the same. What changes is how it behaves in a cup and how much it costs. I eat 20 to 40 g of beef gelatin a day. Here is what the studies say, including the ones that go against me.
Gelatin vs collagen: what is the difference?
- Collagen is the structural protein of skin, bone, tendon and cartilage. You eat it in slow-cooked meat on the bone and in broth.
- Gelatin is collagen after cooking. It dissolves in warm liquid and sets into a gel when it cools.
- Collagen peptides, also sold as hydrolyzed collagen, are gelatin broken down further with enzymes. They dissolve in cold liquid and do not gel.
Does the extra processing matter? In 9 people, plain gelatin raised the collagen peptides Pro-Hyp and Hyp-Gly in the blood within 1 to 2 hours. Free hydroxyproline rose less after gelatin than after a hydrolysate, 94.4 against 150.9 nmol/mL. The authors still concluded that gelatin is as useful as the hydrolysate. (Iwasaki 2022)
My view: they contain basically the same amino acids, made by different processes. Plain beef gelatin is the one I buy. Any simple one from a local shop works.
Gelatin benefits: what the studies show
- Collagen synthesis. 8 healthy men took 5 or 15 g of gelatin with vitamin C, or a placebo, one hour before 6 minutes of rope skipping. The 15 g dose doubled a blood marker of new collagen. (Shaw 2017)
- Glycine supply. Gelatin is about 30% glycine, and that is the amino acid most of this is about. One paper added up how much glycine the body makes, about 3 g a day, and how much a normal diet gives, 1.5 to 3 g. It estimated a shortfall of about 10 g a day for a 70 kg adult. (Meléndez-Hevia 2009) The 30% figure is from Gannon 2002.
- Blood sugar. 9 healthy people drank 25 g of glucose with or without glycine. With glycine, the rise in blood glucose was more than 50% smaller. (Gannon 2002)
- Sleep. 13 athletic men with sleep complaints took 15 g of collagen peptides an hour before bed for 7 nights. They woke up less often, 21.3 against 29.3 awakenings in the sleep lab. Sleep length and time to fall asleep did not change. (Thomas 2024)
- Skin. A meta-analysis of 19 trials with 1,125 participants found that 90 days of hydrolyzed collagen improved skin hydration, elasticity and wrinkles. (de Miranda 2021) Read the honest part before you believe it.
Gelatin benefits for men
97 untrained middle-aged men lifted weights for 12 weeks. One group took 15 g of collagen peptides a day, one took a placebo, one took whey. The collagen group gained 3.42 kg of fat-free mass against 1.83 kg on placebo, and lost 5.28 kg of fat against 3.39 kg. The whey group landed in between and was not statistically different from either. (Zdzieblik 2021)
The collagen synthesis study and the sleep study above were also done in men. The sleep study measured endocrine function and found no difference. None of these studies shows an effect on testosterone.
Gelatin for hair growth
I searched PubMed for a trial of plain gelatin for hair and did not find one.
The closest is a trial of a fish collagen peptide. 114 women aged 20 to 50 with self-reported hair thinning took 1,000 mg a day or a placebo for 24 weeks. Hair diameter increased significantly in the collagen group. (Hwang 2026)
That is one trial, in women, with a specific product. It measured thickness, not regrowth. In my view hair loss is a metabolic problem first, and that is covered in the hair loss guide.
Gelatin for weight loss
- One meal. 24 healthy people ate breakfasts made with different proteins. After the gelatin breakfast they ate about 20% less at lunch than after a casein or soy breakfast. (Veldhorst 2009)
- 36 hours. 23 adults lived in a respiration chamber on a gelatin diet or a casein diet. Hunger was suppressed 44% more on the low-protein gelatin diet. Energy expenditure was the same. (Hochstenbach-Waelen 2009)
- Four months. 65 people lost weight for 8 weeks and then tried to keep it off for 4 months. A gelatin and milk protein diet did no better than milk protein alone. (Hochstenbach-Waelen 2010)
So gelatin fills you up for a meal. It has not been shown to make anyone lose more weight.
The honest part
- The skin evidence is shaky. A 2025 meta-analysis of 23 trials and 1,474 participants split the trials by who paid for them. Trials without pharmaceutical company funding showed no effect on hydration, elasticity or wrinkles. High-quality trials showed no significant effect either. (Myung 2025)
- Gelatin is an incomplete protein. It has no tryptophan. In the chamber study, protein balance was worse on gelatin than on casein. One analysis calculated that collagen can replace up to 36% of daily protein before the essential amino acids fall short. (Paul 2019)
- Most trials used collagen peptides, not gelatin, and most were small.
- The 10 g glycine shortfall is a calculation, not a measured deficiency.
Gelatin goes with milk, eggs and meat. It does not replace them. If you have kidney disease or are on a protein-restricted diet, ask your doctor first.
How I use it
I mix 20 g of beef gelatin into 300 ml of warm milk with sugar. I drink it when I wake up and again an hour before bed. That is 20 to 40 g a day.
The trick is warm liquid, not boiling. I pour a little hot water, add some milk, stir in the gelatin for 10 seconds, then add the rest of the milk.
The milk covers the amino acids gelatin lacks. That is why I count the two cups as a big part of my protein for the day.
Ray Peat argued that a diet of muscle meat alone is out of balance and that gelatin corrects it. His reasoning, with sources, is in Ray Peat on gelatin and glycine. I agree with him. The first peptide I would tell anyone to take is beef gelatin.

Does gelatin help with weight loss?
Gelatin suppresses hunger more than other proteins for a meal or a day. In a 4-month weight maintenance trial of 65 people it did no better than milk protein.
How much gelatin per day?
The studies used 5 to 15 g of gelatin or collagen peptides a day. The author of this article eats 20 to 40 g of beef gelatin a day, in warm milk, as his own practice.
