The amino acids in beef gelatin are glycine and proline. Glycine- is the the smallest amino acid, it allows the mucus proteins to fold with extreme density, helps Cysteine residues to get close enough to one another(Disulfide bondes). Without Glycine, the molecular structure fails and the barrier is weak.
