Ray Peat's Carrot Salad
Short answer: The carrot salad comes straight from Ray Peat's articles. He wrote that a grated raw carrot with salt and vinegar, or with a dressing of vinegar, coconut oil and olive oil, can lower the absorption of bacterial endotoxin from the bowel and help the body clear estrogen.
What Ray Peat wrote about the raw carrot
It started with his own migraines. He found that eating a raw carrot every day prevented them, and began to suspect the fiber was protecting the bowel and working against estrogen. Source: Natural Estrogens
He tested the idea on others. Several women with premenstrual symptoms had their blood estrogen measured before and after what he called the carrot diet. Their estrogen fell within a few days as the symptoms eased. Source: Natural Estrogens
The simplest version he describes is a grated carrot with salt and vinegar. He wrote that something this simple can produce major changes in bowel health and reduce endotoxin absorption. Source: Lactate vs. CO2 in wounds, sickness, and aging; the other approach to cancer
In another article he gives the dressing: vinegar, coconut oil and olive oil, carried into the intestine by the carrot fiber. Source: Epilepsy and Progesterone
His explanation is that carrot fiber is not easily fermented and contains antibacterial chemicals. He puts raw carrots next to bamboo shoots as fibrous foods that lower endotoxin and serotonin. Source: Serotonin: Effects in disease, aging and inflammation
He added one warning. Because raw carrots contain natural antibiotics, regular use should be balanced with vitamin K now and then, or with occasional liver or broccoli. Source: Rosacea, inflammation, and aging: The inefficiency of stress
The recipe, as he described it
- One raw carrot, grated.
- Salt and vinegar, or a dressing of vinegar, coconut oil and olive oil.
- Eaten regularly. His own habit was one raw carrot a day.
- Vitamin K occasionally, or liver or broccoli now and then, to make up for the antibacterial effect.

My take
Carrots and mushrooms are where I get my fiber. I aim for about 10 g of insoluble fiber a day and I avoid the soluble, fermentable kind.
The carrot is one tool. If the gut barrier is weak, it works much better together with enough carbs, gelatin and sunlight. The full plan is in How to fix leaky gut.
Quick answers
What is the Ray Peat carrot salad recipe?
A raw grated carrot with salt and vinegar. In another article he describes a dressing of vinegar, coconut oil and olive oil.
What does the Ray Peat carrot salad do?
According to his articles, the carrot fiber and its natural antibacterial compounds reduce the absorption of bacterial endotoxin from the bowel, which lowers serotonin and helps the liver clear estrogen.
When should you eat the carrot salad?
His articles do not name a time of day. He describes eating one raw carrot daily.
